What You Need to Make It

- 1.5 cups of rice: Long-grain or short-grain works. Just rinse it well.

- 1 large tomato: Sliced thinly to cover the top.
How to Prepare the Filling
Start with the rice. Wash it until the water runs clear. This removes excess starch so the grains stay separate. Do not skip this step.
In a pot, heat the olive oil over medium heat. Add the pine nuts. Stir them constantly. You want them golden brown but not burnt. Burnt pine nuts taste bitter. Once they are fragrant, add the chopped onion. Cook this down until it is soft and translucent. This takes about five minutes.
